By the time I've written this post, It wouldve been raining for almost 2 straight weeks with tiny breaks in between but we've been basically wet for the most part. Our dog hasn't had a decent walk except for the times we go out in the garden and front porch to stretch and go out of the house--but you get the point. The rainy season is upon us which just means time to whip out all the rainy day recipes--soups, porridge and anything warm to brighten up the gloomy days ahead.
I usually cook my arroz caldo like everyone else--with Sticky Rice (malagkit) but since I'm trying to go on a deficit but still want the warm goodness of this dish, I opted to replace 1/2 of it with oatmeal. Sometimes I do it purely with rolled oats but I wanted some of that thick texture you only get when you use sticky rice. This recipe is also very flexible--feel free to add any veggies you want. This is the base version but it's a little carb-heavy so I love adding other veggies like lotus root. You can also century eggs for this recpe--it's divine for this recipe but I used regular eggs this time.
* 1 tbsp oil
* 3 cloves garlic, minced
* 1 small onion, chopped
* 1 thumb-sized ginger, sliced
* 300g chicken (soup cut or breast), cut into chunks
* 1/2 cup sticky rice (malagkit), rinsed
* 1/2 cup rolled oats
* 4 cups chicken broth
* 1/2 tsp turmeric
* 1/2 tsp safflower (kasubha)
* Salt & pepper to taste
𝗧𝗼𝗽𝗽𝗶𝗻𝗴𝘀: boiled egg, fried garlic, green onions
👩🍳 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. In a pot, heat oil and sauté garlic until golden. Set some aside for topping. Add onion and ginger and cook until fragrant.
2. Add chicken pieces, season with salt and pepper, and cook until lightly browned.
3. Stir in malagkit and turmeric, then pour in chicken broth (or knorr chicken cubes). Simmer for 15 minutes.
4. Once rice is half-cooked, stir in oats and continue simmering until thick and creamy (around 15–20 mins). Add kasubha and adjust seasoning.
5. Serve hot with boiled egg, fried garlic, and spring onions. Optional: squeeze calamansi or lemon for brightness 🍋
